Mr. and Mrs. Jeppson

     Friday, September 23 my bestest friend in the whole wide world got married! It was very fun for me because I got to be a long side her for most of the process explaining to her how it's not weird that she was hating the whole wedding planning process and that by the end of my planning I was about ready to take back agreeing to marrying Matthew... ok not really but kind of... The best part was that I got to go through with her when she went to the temple for the first time. This was great because I actually got to sit back and relax and enjoy the process instead of worrying about everyone watching me and knowing that I had no idea what was going on. I seriously loved this experience because Kara and I have been best friends ever since I can remember and it was nice to know that even though we were moving on we would still be friends forever... ok that sounded a liiitttle gay but hey it's the truth and we love each other.
     Their wedding day was so pretty! The weather was perfect... I was a little jealous and hating my life for a minute... but I couldn't be happier for them and was glad there was no worry of rain. I loved her dress, hair, jewelry, shoes, colors... ok lets just say I was happy to be the maid of honor. All in all I love them both... even though Joe is taking her away from me... but I will forgive him.. in a few years when they move back to Utah! GND and HW for life!

Saying Goodbye

    Soo almost four months Matt and I have been married! Woo! And I am just now starting the process of saying goodbye to Jenny Thain and hello to Jenny Weese... it's been a very difficult task for me to bring myself to wait in line to change something that has been the same ever since birth. But I am doing it! Marriage has been a very bitter sweet change for me. This was the first summer I spent away from Sandy, the first summer I spent away from my best friend, the first summer I spent in school and the first summer I lived with a boy. Between the mix of all of these I have been what some would like to call.. an emotional wreck! I am surprised my poor husband hasn't left me yet! However, if it wasn't for him I wouldn't be having the great time I have been having during all of these changes and saying goodbye to my old life.
    After spending two long months living out of boxes in our apartment our house was finally done! We moved July 22 into our lovely home! I never knew moving could be such a long and dreadful task but with help from our friends and family we got a lot done that holiday weekend! It was so nice to finally unpack all of our stuff and get it organized... well some what organized. I am happy to say that about 2 months later we finally hung up pictures, I bought my first plant and we already have a calling in church... our place is starting to feel like home!
    Ever since February 9, the night Matt professed his love to me and put a ring on my finger, our lives have been extremely hectic! From planning a wedding, to graduating college, to getting a real job, to Matt selling his business, to getting married to moving out... our life couldn't have turned out better! And I couldn't have done any of this with out my best friend. And I will maybe think about posting some pictures of our humble home...

Pie

Believe it or not I looove to bake! I decided that once I got married and was done with school... and had more time on my hands... I would try out new recipes and expand my baking skills considering all they've consisted of was chocolate chip cookies and the occasional funfetti cake. So my first attempt to a new recipe is this wonderful apricot pie I found.

The Recipe: Apricot Pie
Chilled pie dough in a 9 or 10" pie plate
2 lbs fresh apricots
1/4 cup flour

Topping:
1 stick butter
3/4 cup sugar
3/4 cup all-purpose flour
1/2 tsp salt
1/2 teaspoon grated nutmeg


Preheat oven to 400ºF with rack in lower third.
Pull apricots (with skins) apart into halves, throw away pits. Melt butter in a small saucepan over medium heat, then stir in sugar, flour, salt, and nutmeg, and remove from heat. Cool mixture until firm enough to crumble, 10 minutes. Toss the apricots with 1/4 c of flour, just to coat them, discard the extra flour. Put apricots in pie shell (I like to stand them up on their ends, overlapping them slightly,) crumble butter mixture on top.

Bake the pie 10 minutes.

Reduce oven temperature to 350ºF and continue to bake until top is golden, 50 minutes to 60 minutes.
Cool pie to warm or room temperature on a rack, serve with fresh whipped cream or vanilla ice cream.

Labor Day Weekend

          Our Labor Day weekend was filled with a bunch of different events! I had to work at Swiss Days literally aaalll day Friday but I actually enjoyed it! I love that atmosphere because it gets me excited for fall. Being up there 13 hours and all I had plenty of time to walk around and enjoy the different booths which gave me some good ideas for crafts that I just may attempt. In our family once fall begins we know that the men in our lives will probably be non-existent until hunting season is over. Since I can feel my sisters pain we spent the night doing what girls do best when we aren't wanted... watch cheesy movies and eat our feelings with delicious cupcakes! Saturday we decided that it was probably a good idea to go to the pool with the perfect hot weather. I love going to the pool with Jess and her cute little family because Olivia keeps me entertained and very occupied the entire time with her amazing diving skills!
        My husband finally decided to join me in Salt Lake and we enjoyed our first Real game of the year. It was a very fun and surprisingly entertaining game. Sunday was very relaxing and enjoyable as usual. The whole Thain family got together and enjoyed a BBQ that was filled with laughter and crying... on the Nordhoff end...
       To finish off the holiday weekend we took our monthly trip to IKEA. We are finally getting used to IKEA and only get lost a few times every visit. We went to our favorite lunch spot Smashburger and then headed up to Park City to do a little Labor Day deal shopping. I am happy to say it was a success! We finally decided to take the trek back up to our humble home and ended the night with tin foil dinners with the Weese family.
